Ambrosia Rice Pudding topped with mango puree

- 850g Ambrosia creamed rice (2 x 425g cans)
- Mango Coulis
- Divide the rice pudding between four serving dishes.
- Top each pudding with a thick layer of mango coulis. Chill before serving
As an alternative serve the rice pudding hot. For added flavour and texture stir some canned or fresh mango through the rice.
