Smash & Paxo Croquettes

Ingredients

  • 125g Smash
  • 75g Paxo Stuffing
  • 400ml Boiling water
  • 50ml Double cream
  • 1 Egg (beaten)
  • Salt
  • Pepper

Method

  1. In a bowl, mix together the Smash and Paxo Stuffing then pour over the water and mix until smooth. Allow to cool slightly.
  2. Add the cream and eggs and season to taste.
  3. Roll the mixture into 40g balls.
  4. Deep fry at 170°C until golden brown and serve.
