Minted Pea Soup

A simple and healthy recipe, all cooked in the same pan within 20 minutes

Serving Size: 250g


  • 675g Frozen Peas
  • 75g Onion - Diced
  • 75g leeks - washed & sliced
  • 24 Medium Size Mint Leaves + 8 sprigs for garnish
  • 3 Cloves of Garlic - crushed
  • 3 Bay Leaves
  • 25g Bisto Vegetable Bouillon
  • 1000ml Water


  1. Place the peas, onion, leek, mint, garlic and bay leaves into a large saucepan, add the water & bouillon paste
  2. Bring to the boil, reduce the heat and simmer until the vegetables are cooked, skimming occasionally.
  3. Remove the bay leaves and strain the liquid into a clean saucepan. Place all the vegetables into a food processor and mix to a smooth puree, add the puree to the liquid.
