Ambrosia Sherry Trifle

  • 500g Frozen berries
  • 50g Unrefined granulated sugar
  • 1 Lemon (juice & zest)
  • 30g Sponge fingers
  • 100ml Sherry
  • 400ml Ambrosia custard
  • 400ml Fresh double cream
  • Grated dark chocolate


  1. Place the berries, sugar and lemon (juice & zest), into a pan. Bring to a simmer and then remove from the stove and allow to cool.
  2. In 10 suitable glasses, place pieces of broken sponge fingers. Drizzle over the sherry. Spoon over the berry mixture. Whisk together the custard and cream until it forms soft peaks.
  3. Pipe the cream onto the berry mixture, sprinkle over the grated chocolate and serve.
