Vegetable Chow Mein

Ingredients

  • 1.5kg Sharwood's Medium Egg Noodles (cooked & refreshed)
  • 200g Oyster Mushrooms (sliced)
  • 200g Baby Corn (sliced into 1cm pieces)
  • 300g Mixed Peppers (red, yellow & green peppers, sliced)
  • 300g Onions (diced)
  • 100g Bean Sprouts
  • 1kg Sharwood's Chow Mein & Chinese Mushroom Sauce
  • 50g Spring Onions
  • Coriander to Garnish

Method

  1. In a little sunflower oil, pan fry the onions, peppers and baby corn for 3 minutes.
  2. Add the mushrooms and bean sprouts and continue cooking for a further 2 minutes.
  3. Stir in the noodles and cook for a further minute.
  4. Add the sauce and heat through.
  5. Serve, garnished with spring onions and coriander

Beef Chow Mein

Ingredients

  • 1.5kg Sharwood's Medium Egg Noodles (cooked & refreshed)
  • 1kg Flank steak (thinly cut into strips)
  • 400g Red & green peppers (sliced)
  • 200g Onions (diced)
  • 1kg Sharwood's Chow Mein & Chinese Mushroom Sauce
  • 50g Spring onions
  • Coriander to garnish

Method

  1. In a little sunflower oil, pan fry the beef for 1 minute.
  2. Add the peppers and onion and continue cooking for a further 3 minutes.
  3. Stir in the noodles and cook for a further minute.
  4. Add the sauce and heat through.
  5. Serve, garnished with spring onions and coriander

Tips

Using Flank steak, be sure to cut the meat as thinly as possble and accross the grain to ensure it's as tender as possible.

You can also marinade the beef in soy, adding in other flavours, such as ginger; this will add to the flavour as well as making it more tender.

BBQ Ratatouille

Ingredients

  • 50ml Vegetable oil
  • 300g Onion (1cm dice)
  • 200g Red pepper (1cm dice)
  • 200g Yellow pepper (1cm dice)
  • 200g Courgette (1cm chopped)
  • 200g Aubergine
  • 100g Celery (finely sliced)
  • 300g Homepride BBQ Sauce

Method

  • In a large pan, sweat off all the vegetables (except the courgette), in the oil for approx 5 minutes.
  • Add the Homepride BBQ Sauce and courgette and heat through for a couple of minutes.
  • Serve as either a vegetarian option with rice or as a vegetable accompaniment.

BBQ Chicken

Ingredients

  • 900g Chicken breast (sliced into strips)
  • 300g Homepride BBQ sauce
  • 450g Red & Yellow Peppers (15mm dice)

Method

  • Marinade the peppers and chicken in the BBQ sauce for 2 – 12 hours.
  • Spread out on a non stick baking tray and roast in a hot oven (220c) for approx 15 mins, until the chicken and peppers start to brown.
  • Serve either as part of a main course, or as part of a salad or in a tortilla wrap, with salad leaves, tomatoes & cheese.

Beef Meatballs

Ingredients

  • 2kg Beef mince
  • 100g Dried breadcrumbs
  • 200g Onion (finely chopped)
  • 50ml Vegetable oil
  • 2kg Homepride Tomato & Basil Sauce

Method

  • Place the beef in a mixer and select the paddle attachment .
  • Add the onions and breadcrumbs and mix on a medium speed until the mixture becomes sticky (approx 3 minutes).
  • Mould the meatballs into equal 25g balls (the mix should make 92 meatballs).
  • Gently pan fry the meatballs in the oil until they begin to brown.
  • Transfer the meatballs to an ovenable dish and pour over the Tomato & Basil sauce.
  • Bake at 180c for approx 15-20 minutes, or until the meatballs are fully cooked through.
  • Serve with rice and a selection of vegetables.

Sweet & Sour Chicken Noodles

Ingredients

  • 700g Sharwood's Medium Dried Noodles
  • 50ml Vegetable Oil (for coating the cooked noodles)
  • 50ml Vegetable Oil (for frying the chicken & vegetables)
  • 700g Frozen Cooked Chicken (defrosted and drained)
  • 150g Frozen Red & Green Peppers (defrosted & drained)
  • 150ml Canned Pineapple Pieces (drained)
  • 1200g Sharwood's Sweet & Sour Sauce
  • 10g Fresh Chopped Coriander
  • 150g Sharwood's Prawn Crackers

Method

  1. Place noodles in boiling water for approx 3 minutes (until just cooked)
  2. Drain the noodles and plunge into cold water and drain again
  3. Drizzle the cold noodles in a little oil, to prevent them from sticking
  4. Place in a suitable container, then refrigerate (at this stage the noodles can be pre-portioned, if desired). The noodles can be held this way for upto 24 hours.
  5. Place a little oil in a large frying pan or wok Add the chicken, peppers and pineapple and cook for approx 2 minutes, or just until they begin to colour, then pour in the sauce and bring to a simmer. (at this stage the chicken and sauce can be held in a bain marie for ease of service).
  6. In a separate frying pan or wok, place in one portion of the noodles and heat through, stirring or tossing from time to time to prevent sticking.
  7. Place the noodles in the noodle box and carefully pour over a portion of the chicken, sauce and vegetables.
  8. Garnish with coriander and serve with Sharwood's Prawn Crackers.

Chicken Chow Mein

Ingredients

  • 50ml Sunflower Oil
  • 550g Chicken Breast - thinly sliced
  • 115g Onions - sliced
  • 50g Cashew Nuts
  • 275g Sharwood's Egg Noodles - Dry weight
  • 115g Baby Corn - sliced
  • 50g Each of Green and Red Peppers - sliced
  • 50g Water Chestnuts - sliced
  • 200g Bean sprouts
  • 300g Sharwood's Chow Mein Chinese Mushroom Sauce
  • Spring Onions - sliced, for garnish

Method

  • Cook the noodles in plenty of boiling, salted water for 4 minutes. Drain well.
  • Heat the oil in a wok. Stir-fry the chicken and onions for 4 minutes.
  • Add the cashew nuts, baby corn, peppers, water chestnuts and stir-fry for a further 1-2 minutes.
  • Add the Sharwood's Egg Noodles, bean sprouts and Sharwood's Chow Mein Sauce.
  • Heat thoroughly and serve.

Tips

Garnish with spring onions. Turkey or prawns could also be used in this recipe.

Sharwood’s Chicken Tikka Masala

Ingredients

  • 1kg Chicken Breast - 30mm dice
  • 50ml Sunflower Oil
  • 30g Cherry Tomatoes (halved)
  • 1.25kg Sharwood's Tikka Sauce
  • 150g Spinach

Method

  1. Stir fry the chicken, in the oil until golden brown.
  2. Add the Tikka sauce and the cherry tomatoes.
  3. Bring to a simmer and cook the chicken.
  4. Add the spinach and stir through.
  5. Serve with Basmati rice.

Tips

Garnish with chopped coriander and serve with Sharwood's Mango Chutney.

Paneer Tikka Masala

Ingredients

  • 20ml Vegetable oil
  • 400g Paneer, chopped into 25mm dice
  • 300g Cauliflower, cut into small florets, approx 30mm
  • 200g Fresh Spinach
  • 400g Canned chickpeas, drained
  • 1kg Sharwood's Tikka Masala sauce

Method

  1. Sauté the paneer in the oil until golden brown.
  2. Add all the remaining ingredients, gently stir and heat to a simmer, cover and simmer for 20 - 25 minutes, stirring occasionally.
  3. Serve with Basmati rice.

Bombay Chicken with Red Lentils

Ingredients

  • 400g Red Lentils (canned) - washed
  • 100g Onion - chopped
  • 1 Green Chilli - finely sliced
  • 3 tsp Cumin - ground
  • 1 tsp Tumeric - ground
  • 1 tsp Fresh Ginger - finely chopped
  • 1675ml Water
  • 1kg Chicken thigh meat, chopped
  • 450g Sharwood's Balti Sauce

Method

  • Combine the lentils, onions, chillies, cumin, turmeric and ginger with the water in a large pan.
  • Bring to the boil then simmmer for 45 minutes.
  • In another large pan, brown the chicken pieces, then add to the lentils and cook until the chicken is tender - approx 25 minutes.
  • Add the Sharwood's Balti Sauce, mix well and heat through.
  • Serve with Sharwood's Naan bread.

Tomato and Pumpkin Korma

Ingredients

  • 225g Pumpkin or Squash - 30mm Dice
  • 225g Potatoes - 30mm Dice
  • 110g Onions -10mm Dice
  • 450g Sharwood's Korma Sauce
  • 225g Tomatoes - skinned, deseeded, and quartered
  • 10ml Sunflower Oil
  • 100g Greek Yoghurt

Method

  1. Cook the potatoes and pumpkin until just done.
  2. Fry the onions in the oil and stir in the korma sauce.
  3. Add the potatoes, pumpkin and tomatoes and bring to a simmer.
  4. Remove from the heat and stir in the yoghurt.
  5. Serve with Basmati rice.

Tips

Serve either with rice and poppadom as part of a main course or in a bowl as a side dish, with some more chopped coriander. Add broccoli for more colour.

Ingredients

  • 15ml Vegetable Oil
  • 150g Diced onions
  • 150g Diced mixed peppers
  • 1kg Homepride Chilli Sauce
  • 300g Quorn Pieces
  • 400g Can kidney beans, drained
  • 10 40g Wraps, warmed
  • 150g Grated cheddar cheese

Method

  1. Place the oil in a saucepan; add diced onions and peppers and sauté until soft.
  2. Add the Homepride Chilli Sauce and Quorn pieces. Heat until the mixture is simmering.
  3. Cover and cook gently for 10 minutes, stirring frequently.
  4. Add kidney beans and bring back to simmering point.
  5. Fill each wrap with the chilli; top with grated cheese, roll up and serve.

Tips

Serve with a crisp salad. As an alternative serve as a baked potato filling or with some boiled brown rice.
