Sweet & Sour Chicken Wings

Ingredients

  • 1.5kg Chicken Wings
  • 300g Sharwood's Sweet & Sour Sauce
  • Chopped coriander and deep fried spring onion for garnish

Method

  1. Trim the tip off chicken wings and discard.
  2. Cut the wings at the knuckle and marinade in the sauce for 4 - 12 hours (the longer you marinade the more flavour it will impart).
  3. Bake in the oven at 180c for approx 25 minutes, or until the chicken is cooked and the glaze is golden red.
  4. Serve garnished with chopped coriander and some deep fried spring onion

Tips

For an extra kick, add a little chopped chilli or chilli powder

Vegetable Chow Mein

Ingredients

  • 1.5kg Sharwood's Medium Egg Noodles (cooked & refreshed)
  • 200g Oyster Mushrooms (sliced)
  • 200g Baby Corn (sliced into 1cm pieces)
  • 300g Mixed Peppers (red, yellow & green peppers, sliced)
  • 300g Onions (diced)
  • 100g Bean Sprouts
  • 1kg Sharwood's Chow Mein & Chinese Mushroom Sauce
  • 50g Spring Onions
  • Coriander to Garnish

Method

  1. In a little sunflower oil, pan fry the onions, peppers and baby corn for 3 minutes.
  2. Add the mushrooms and bean sprouts and continue cooking for a further 2 minutes.
  3. Stir in the noodles and cook for a further minute.
  4. Add the sauce and heat through.
  5. Serve, garnished with spring onions and coriander

Honey & Ginger Pork Ribs

Meal Type: Main Course, Starter
Preperation Time: 12 hours 5 mins
Cooking Time: 1 hours 15 mins

Ingredients

  • 3kg Pork Ribs
  • 1kg Sharwood's Honey & Ginger Sauce

Method

  1. Coat the ribs in the sauce and place in an ovenable container, covered with foil (or lidded).
  2. Marinade for between 4 and 12 hours (the longer you leave these the more flavour they will take on).
  3. Braise in the oven for 1 hour at 180c (keep covered).
  4. Remove the foil and continue cooking for 15 mins at 200c. Serve with the sauce.

Tips

For a starter, cut the ribs in half prior to marinading and serve 200g per portion (the above recipe will give 20 portions at 200g)

Tofu & Shiitake Mushrooms in Black Bean Sauce

Ingredients

  • 2kg Tofu (2cm dice)
  • 400g Green Peppers (15mm dice)
  • 400g Onions (15mm dice)
  • 200g Shiitake Mushrooms (finely sliced)
  • 1.5kg Sharwood's Black Bean Sauce

Method

  1. In a little sunflower oil, fry the Tofu, until it begins to brown and then remove from the pan.
  2. Pan fry the onions and green peppers for 2 minutes
  3. Add the mushrooms and fry for a further 3 minutes
  4. Add the Tofu and pour in the Black Bean sauce
  5. Heat through and serve

Tips

Dry the tofu slightly before frying; this will allow the skin to crisp up. Alternatively the tofu can be deep fried or shallow fried in a little more oil.

Honey & Ginger Duck

Ingredients

  • Sunflower oil for pan frying
  • 1kg British Duck Breast  (finely sliced)
  • 400g Mange Tout
  • 300g Carrots (cut into fine batons)
  • 100g Spring Onions (sliced)
  • 500g Sharwood's Honey & Ginger Sauce
  • Deep Fried Chill (finely sliced) for Garnishing
  • 2kg Sharwood's Medium Egg Noodles (cooked)

Method

  1. Pan fry the duck in a little sunflower oil for 5 minutes.
  2. Add the carrots and mange tout and cook for a further minute.
  3. Pour in the sauce and heat through.
  4. Stir in the spring onions and serve on a bed of Sharwood's Noodles.
  5. Garnish with deep fried chilli

Beef Chow Mein

Ingredients

  • 1.5kg Sharwood's Medium Egg Noodles (cooked & refreshed)
  • 1kg Flank steak (thinly cut into strips)
  • 400g Red & green peppers (sliced)
  • 200g Onions (diced)
  • 1kg Sharwood's Chow Mein & Chinese Mushroom Sauce
  • 50g Spring onions
  • Coriander to garnish

Method

  1. In a little sunflower oil, pan fry the beef for 1 minute.
  2. Add the peppers and onion and continue cooking for a further 3 minutes.
  3. Stir in the noodles and cook for a further minute.
  4. Add the sauce and heat through.
  5. Serve, garnished with spring onions and coriander

Tips

Using Flank steak, be sure to cut the meat as thinly as possble and accross the grain to ensure it's as tender as possible.

You can also marinade the beef in soy, adding in other flavours, such as ginger; this will add to the flavour as well as making it more tender.

Panfried Monkfish in Black Bean Sauce

Meal Type: Main Course, Starter

Ingredients

  • 20ml Sunflower Oil
  • 1.5kg Monkfish (10 Darnes/Medallions)
  • 300g Green Peppers (2cm dice)
  • 300g Onions (2cm dice)
  • 1kg Sharwood's Black Bean Sauce
  • 1.5kg Sharwood's Noodles (cooked)

 

Method

  1. Season the monkfish pieces and pan fry in a little sunflower oil, for 1 minute, either side
  2. Add the peppers and onions and continue frying for 3 minutes (or until the monkfish is just cooked)
  3. Pour over the Sharwood's Black Bean sauce and heat through
  4. Serve on a bed of Sharwood's noodles and garnish with a little coriander if required

Tips

The monkfish can also be roasted in the oven, with the vegetables and served on the noodles with the sauce poured over.

Marinated Lamb with Chilli and Peppers in Black Bean Sauce

Ingredients

  • 40ml Sunflower Oil
  • 2kg British Lamb (leg or loin; diced)
  • 10g Cornflour
  • 100g Soy Sauce
  • 20g Red Chill (finely diced)
  • 400g Red & Yellow Peppers (sliced)
  • 300g Onion (finely diced)
  • 1kg Sharwood's Black Bean Sauce
  • 1kg Cooked Rice or Noodles

Method

  1. Mix the cornflour and soy and marinade the lamb for 30-60 minutes.
  2. Panfry the lamb in a little hot oil for 2 minutes
  3. Add the onions and chilli and continue frying for a further 2 minutes
  4. Add the peppers and fry for 2 minutes
  5. Stir in the black bean sauce
  6. Serve with rice or noodles

Tips

Ensure the oil is hot when cooking the lamb, as the cornstarch will help seal in the marinade and juices.

Sweet & Sour Salmon Noodle Salad

Ingredients

  • 400g Sharwood's Sweet & Sour Sauce
  • 20g Sesame Oil
  • 20g Soy Sauce
  • 10g Lime Juice
  • 2kg Sharwood's Egg Noodles (cooked, refreshed and lightly oiled)
  • 600g Cooked Salmon (seasoned and flaked)
  • Salt & Black Pepper
  • Coriander & Lime for Garnish

 

Method

  1. Mix the Sweet & Sour Sauce with the soy, sesame oil and lime juice
  2. Gently mix the salmon and noodles and season
  3. Dress with the sauce, garnish with chopped coriander and serve on lettuce leaves.
